Chicken Inasal was born on the street corners of Bacolod City — a marinade of calamansi, annatto (atsuete), lemongrass, and garlic, basted with a little lard, grilled over live charcoal. It's the kind of food you smell two blocks away.
Bella's Inasal is the Bella family's love letter to that tradition. Every morning they break down whole chickens and start the marinade. Every afternoon the charcoal is lit. The lechon rotates slow. The batchoy broth simmers. This is Ilonggo cooking — warm, generous, unhurried.
